Warm your hands and your belly around the fire with this delicious Beef Stew and mop up the juices with Damper on a Stick.
1 tsp ghee or butter1kg good quality minced beef 8 bacon rashers, diced2 large onions, diced2 garlic cloves, diced2 tsp fresh thyme or 1 tsp dried thyme½ tsp hot smoked paprika (optional)4 tbsp black treacle2 tbsp apple cider vinegar1 tbsp tomato pureeSalt and black pepper2 tbsp wholegrain mustard8 large tomatoes, roughly diced4 medium carrots, diced400ml waterA large handful of fresh parsley
Brown the onion, garlic bacon and beef, beforehand, or simply throw it all into your camp oven and let it do the work.
Serve with campfire damper on a stick.
